The Paloma

We’re over the hump of peak summer (although it’s touch and go; summer’s end tends to extend over months), and there are only three things we want to drink: fresh watermelon juice, anything with lime in it, and tequila. It was only natural that at some point we attempted a combination of all three, and as it happens, the result is delicious.

Directions: Chop the watermelon into squares and blend with liberal squeezes of lime and one peg of tequila (per serving). Strain to remove seeds and extra-pulpy bits, pour into a cocktail shaker filled with ice, and shake vigorously. Serve in a glass with a salted rim.
