Recipes from the NicoCaara kitchen are delicious, nourishing, wholesome, and (this bit is key) achievable. This time around we visited their organic farm in Delhi, and got Chef Lokesh to take us for a little tour and round off the visit with a quick cook outdoors under a canopy of trees.
The Watermelon Gazpacho is the perfect primer to every summer meal; this one’s a doozy with an acrobatic play of tart and sweet, rounded off with a splash of grape wine vinegar and olive oil. We even picked fresh basil and garlic from the farm and infused it in this cold-serve soup; your quintessential farm-to-plate experience served fresh.
